105degrees, L2/W1/D2: coconut veggie wraps

Today, when we walked into class, Haylee had presents waiting for us: “textbooks”! We got The Flavor Bible and What To Drink With What You Eat. The former is an encyclopedia of ingredients and dishes and what flavors, seasonings, and accompaniments go best with each. The latter is the same idea, but with drinks! Very cool books.

We planted an assortment of microgreens to harvest and use later in the month.

We started some simplified “caramelized” onions, similar to those we made for the pizza in Level I.

What you see below will become nacho cheese crumbles. If you’re wondering, there was a small hole in the middle of the nonstick sheet, so there WAS a purpose to spreading it into this shape!

This here is (wait for it) pistachio-macadamia-coconut butter. Wowie.

The coconut-miso butter below will harden in the fridge overnight.

There was lots of prep today, as you can tell, but we did complete one dish. Remember those crazy coconut wrappers I made yesterday? They’d finished drying.

I think the dots turned out best, so I decided to use that portion in my wrap.

An excellent assortment of veggies went inside.

All wrapped up and ready to go!

Mine contained butter lettuce; julienned carrot, red bell pepper, and mango; enoki mushrooms; sliced avocado; and a touch of cilantro.

We served them with a pineapple-chile dipping sauce.

I think my wrapper turned out pretty cool-looking.

Another colorful, delicious, and healthy dinner!

    Your wrap is gorgeous! Nice work.

    I am getting back into sprouting; I need to get some microgreens going too. Love them.

    I put The Flavor Bible on my wish list, it looks interesting and helpful. I tend to reach for the same flavorings again and again and I need to get more creative there.

      I hear you on the flavor repetition conundrum. One thing that’s valuable to me is being able to match up flavors even if they’re not my favorite, or if I don’t like them at all. It’s good to know how to best prepare even the foods you don’t enjoy.

    So beautiful! The wrap looks gorgeous and delicious but was it hard to eat? It’s packed with so many veggies!!

      Haha, yes, it was! I made it pretty for the pictures, but then I kinda had to scrunch it up to eat it. But it was delicious, so who really cares? 😛

    I love how 105 is about teaching you the value of aesthetics AND flavour, with neither displacing the other. I’d much rather food that tastes good but looks bad to food that looks good but tastes bad, and yet everything you make at 105 sounds amazingly tasty and LOOKS like heaven to boot.

    I never would’ve imagined coloured polka dot wrappers to looks that wonderful unless it was a “wrap” for me in the form of a polka dot 50s-style dress… btu you make it work. Applause applause!

    That wrap is kitschy cool, and great fillings! I love enoki shrooms.

    I have a special something to tell you about caramelized onions. Hopefully it’ll make a mention in my blog tomorrow.

    So cool that you’re making microgreens – I love that that’s a part of what they’re teaching you.

    Thanks for sharing all the deliciousness. I want to read those two books too – wonder if we’d agree with what they say about what goes with what.

      These two books will definitely be great resources in my kitchen for a long time to come.

      I can’t give away 105’s exact recipe, but I’ll tell you that you CAN make a very comparable wrap with nothing more than young coconut meat!

I suspect that very few people ever actually return to see the responses to their comment, but I keep doing it for the few who do!

    Wow, I would never buy a lamp in that skin but it sure does add a light-heartedness to your vegetable wrap.

    I’m also wondering if you will actually try those microgreens once they’re grown. ;-P

    Cool, I wasn’t expecting the polka dot wrapper to come out so vibrant, it’s gorgeous! Pistachio-macadamia-coconut butter….woah.

    Those two text books sound like very cool books!
    I agree with you…I think the dots turned out the best. They sure did make for a cool looking wrap. That dipping sauce sure sounds good too! Did the wrap and sauce taste as good as it looks?

      I loved the wrap – can’t go wrong with all those crunchy veggies! The sauce was great, too; very sweet and pineappley.

    W A Y too many amazing things in this post! You are learning some pretty awesome techniques. Those wraps look great- and that dipping sauce! Oh and the soon to be onions and pesto creation… yum!

    The flavor bible is the best book EVER – I love mine to pieces.

    Those wrappers are amazing – the dot one turned out incredible! Such a great idea.
