P90X Week 3: hearty winter meals
The blondie is a HIT! You guys are going nuts over that thing (yes, pun intended). Tara from Vegan Piggy, Alayna from Thyme Bombe, and Aparna from Love Street Living Foods have all tried (and loved!) it—when are YOU going to give it a shot? You’ve got nothing to lose but 5 short minutes of your day!
Meanwhile, I’m back with another week of vegan P90X meals. Looking at my food log now, it seems Matt and I ate heartier fare than usual this week, though not on purpose. (I blame the snow.) However, we did still begin each day with RAW fruit-and-protein-packed green smoothies.
MONDAY
Breakfast: TVP oatmeal
Lunch: Garden of Life RAW Meal shake
Dinner: Gazpacho (RAW, below); macadamia-banana-cacao pudding (RAW)
Snacks: Edamame; red wine; ½ a caramel-fudge brownie (RAW)
TUESDAY
Breakfast: PureFit protein bar
Lunch: Curried lentil stew (above, adapted from Vegan Yum Yum)
Dinner: Ricki‘s tofu mole (below) over a mixture of cooked brown rice and cauliflower “rice” (RAW)
Snacks: Dried apple slices (RAW); mixed berries with coconut yogurt (RAW); small RAW Meal shake
WEDNESDAY
Breakfast: TVP oatmeal; Granola Gourmet bar
Lunch: LightLife taco “meat” with black beans, veggies, avocado, and homemade tortilla chips (above AND below)
Dinner: Enchilada-sauced seitan; steamed veggies with homemade sweet potato chips (below)
Snacks: Mixed berries with coconut yogurt (RAW); ½ a caramel-fudge brownie (RAW)
THURSDAY
Breakfast: Kashi GoLean hot cereal
Lunch: Tempeh-sausage-stuffed tofu omelet (below, adapted from Vegan Brunch)
Dinner: Leftover curried lentil stew (see above)
Snacks: Banana with PB2; mixed berries with coconut yogurt (RAW); this awesome blondie (RAW)
FRIDAY
Breakfast: Leftover tofu-“sausage” omelet (see above)
Lunch: Leftover curried lentil stew (see above)
Dinner: “Wheatballs” (above, adapted from Vegan on the Cheap) over shirataki noodles with homemade marinara; roasted asparagus (below)
Snacks: Dried apple chips (RAW); enchilada-sauced seitan
SATURDAY
Breakfast: ½ a banana with almond butter, ½ a RAW Meal shake
Lunch: Leftover noodles with marinara and “wheatballs” (see above)
Dinner: Tofu-veggie stir fry; brown rice
Snacks: Rum (hey, we went out that night!)
SUNDAY
Breakfast: RAW Meal shake
Lunch: Chickpeas; leftover stir fry; leftover “wheatballs” (see above)
Dinner: Whole grain bread with homemade hummus
Snacks: Mixed berries with coconut yogurt (RAW); ½ a RAW Meal shake
So there you have it! Other than cooking and eating, Matt and I have spent the majority of our free time making sexy faces (see above), getting enmired in controversy (see here), and trying our best to stay warm (see below).

When I was growing up, my mom kept the house freezing cold in the winter to save money (in fact, she still does), which I always hated, yet it apparently stuck with me 😛 Stay warm up there!

That food looks amazing. Speaking of tortilla chips, have you heard of “absolutely abeba’s krazy krackers”? It’s this woman who is the queen of all raw food crackers, and her recipes are actually amazing. I saw her on youtube once and she cracked me up, so I bought one of her ebooks. I’ve only tried one recipe but the results were fantastic, and she teaches you how to make the perfect cracker. I’m about to do a post on it! Definitely try them!
That lentil stirfry thing looked so f-ing good. I am excited to go back to 80-20 so that I can eat those types of things!

I know Abeba! I used to live near her and we went to the same potlucks. She’s a cool, funny lady with an awesome speaking voice (I told her she should become a singer) and she says she cured herself of compulsive overeating by going raw and especially her crackers helping out her crunch jones!

It was a raw gazpacho with lots of veggies (tomatoes, cucumber, bell pepper, butternut squash, and more)!
I must say, I’ve become a real pro at green-smoothie-making 😛

So, with all that delicious food and all that P90X, what are your results???? Increasing weights? Having fun? Do tell! Are you sort of going by the nutritional requirements via the vegan guide to P90X?
Oh yeah, I guess I didn’t mention anything about results, did I? Well, I’ve been counting calories pretty closely for over a week now, and I think it’s paying off. I hesitate to give details quite yet (I don’t wanna be all “Woohoo it’s working I’m losing weight!” until I establish it as a definite pattern, yknow?), but after this week, we’ll hit Day 30, and I’ll HAVE to discuss it at that point 😉
I wish I had some snow to blame. I blame the greyness instead. Everything looks delicious. I miss tofu.
I’m sorry you have trouble with tofu 😦 Are you able to eat tempeh, since it’s fermented? I guess I don’t know for sure if it’s gluten-free…
I didn’t want to ask you about the weight: ok, I didn’t mention it. We’re going to keep it under the hat and keep it good and not jinx it, and you’re going to do just wonderfully, and soon you’ll be able to emerge from the ocd-counting chrysalis and be delighted with yourself and your body!

Hehe, well, I don’t believe in jinxes, so no worries 😉 Let’s just say…it SEEMS good right now, but I’m holding my breath for a few more days. Unless I see a pattern over the course of 2+ weeks, I tend to chalk it up to those random weight fluctuations your body likes to play with.
I love your image of emerging from a chrysalis! Hopefully by/around springtime, I’ll do just that.

I made raw nacho cheese yesterday too! 😀 But I used it to coat kale chips that are now just about done dehydrating.

My green smoothies only look emerald green if I use pale fruits like pears, pineapple, banana, etc. But when I use berries (my favorite), they look like mud! So don’t worry if yours aren’t pretty 🙂
Oh my goodness Amber, I am dying over all your fabulous meals!! Can I just come live with you and eat all the meals you eat? Hahah, I’m kidding of course. 🙂 Everything looks great, and way to go on the raw food! I’ve been working on incorporating a lot more raw food into my diet, too, especially where veggies are concerned. I feel so fresh and energized. 🙂
