P90X Week 3: hearty winter meals

January 24, 2011

The blondie is a HIT! You guys are going nuts over that thing (yes, pun intended). Tara from Vegan Piggy, Alayna from Thyme Bombe, and Aparna from Love Street Living Foods have all tried (and loved!) it—when are YOU going to give it a shot? You’ve got nothing to lose but 5 short minutes of your day!

Meanwhile, I’m back with another week of vegan P90X meals. Looking at my food log now, it seems Matt and I ate heartier fare than usual this week, though not on purpose. (I blame the snow.) However, we did still begin each day with RAW fruit-and-protein-packed green smoothies.

Lunch: Garden of Life RAW Meal shake
Dinner: Gazpacho (RAW, below); macadamia-banana-cacao pudding (RAW)

SATURDAY
Breakfast: ½ a banana with almond butter, ½ a RAW Meal shake
Lunch: Leftover noodles with marinara and “wheatballs” (see above)

SUNDAY

Lunch: Chickpeas; leftover stir fry; leftover “wheatballs” (see above)
Dinner: Whole grain bread with homemade hummus
Snacks: Mixed berries with coconut yogurt (RAW); ½ a RAW Meal shake

So there you have it! Other than cooking and eating, Matt and I have spent the majority of our free time making sexy faces (see above), getting enmired in controversy (see here), and trying our best to stay warm (see below).

Hope you all had a great week and weekend, too!

When I was growing up, my mom kept the house freezing cold in the winter to save money (in fact, she still does), which I always hated, yet it apparently stuck with me 😛 Stay warm up there!

I love this glimpse into how you’re making your diet and workouts work for you. Thanks for sharing!

You are most welcome, m’dear. Thanks for reading! 😀

That food looks amazing. Speaking of tortilla chips, have you heard of “absolutely abeba’s krazy krackers”? It’s this woman who is the queen of all raw food crackers, and her recipes are actually amazing. I saw her on youtube once and she cracked me up, so I bought one of her ebooks. I’ve only tried one recipe but the results were fantastic, and she teaches you how to make the perfect cracker. I’m about to do a post on it! Definitely try them!

That lentil stirfry thing looked so f-ing good. I am excited to go back to 80-20 so that I can eat those types of things!

I have not heard of those crackers! I will certainly check out your post to learn more 🙂

You’re in the home stretch with the Cousens program; keep at it and finish strong!

      • January 24, 2011 8:02 pm

I know Abeba! I used to live near her and we went to the same potlucks. She’s a cool, funny lady with an awesome speaking voice (I told her she should become a singer) and she says she cured herself of compulsive overeating by going raw and especially her crackers helping out her crunch jones!

Too funny! Don’t you just love serendipity? 🙂 Now I’ll REALLY have to look up her crackers!

How did a guy like that get hooked up with a good lookin’ girl like you?!

(I didn’t know Amber would post this candid photo of my impeccable fashion sense. For the record, that scarf was hand-knitted by my mom.)

Psh, come on now. You know the face you’re making in that first pic is a total turn-on.

Your gazpacho looks so much better than any gazpacho I’ve ever had. Maybe I should try making it myself someday.

Oooooh and your green smoothies look fantastic. I want!

    • Amber Shea @Almost Vegan permalink
      January 24, 2011 2:18 pm

It was a raw gazpacho with lots of veggies (tomatoes, cucumber, bell pepper, butternut squash, and more)!

      I must say, I’ve become a real pro at green-smoothie-making 😛

  8. January 24, 2011 3:58 pm

Lots of yummy stuff! I need a high-speed blender so I can make smoothies as luscious-looking as that!

    • Amber Shea @Almost Vegan permalink

You need a high-speed blender for a lot of reasons, my friend 😛 No other blender can compare!

  9. January 24, 2011 4:44 pm

Hope you’re staying warm! All those meals look incredible, especially the “taco meat”!

  10. January 24, 2011 4:57 pm

His and Hers smoothies! So cute! And they look super thick- yum! And damn, that lentil stew looks incredible! As does all the meals here!

So, with all that delicious food and all that P90X, what are your results???? Increasing weights? Having fun? Do tell! Are you sort of going by the nutritional requirements via the vegan guide to P90X?

    • Amber Shea @Almost Vegan permalink
      January 24, 2011 5:53 pm

Oh yeah, I guess I didn’t mention anything about results, did I? Well, I’ve been counting calories pretty closely for over a week now, and I think it’s paying off. I hesitate to give details quite yet (I don’t wanna be all “Woohoo it’s working I’m losing weight!” until I establish it as a definite pattern, yknow?), but after this week, we’ll hit Day 30, and I’ll HAVE to discuss it at that point 😉

  11. January 24, 2011 7:25 pm

I wish I had some snow to blame. I blame the greyness instead. Everything looks delicious. I miss tofu.

    • Amber Shea @Almost Vegan permalink
      January 24, 2011 8:59 pm

I’m sorry you have trouble with tofu 😦 Are you able to eat tempeh, since it’s fermented? I guess I don’t know for sure if it’s gluten-free…

  12. January 24, 2011 8:07 pm

I didn’t want to ask you about the weight: ok, I didn’t mention it. We’re going to keep it under the hat and keep it good and not jinx it, and you’re going to do just wonderfully, and soon you’ll be able to emerge from the ocd-counting chrysalis and be delighted with yourself and your body!

Good for you! And thanks again for sharing all the scrumptious-looking food
    love
    Ela

      January 24, 2011 9:01 pm

Hehe, well, I don’t believe in jinxes, so no worries 😉 Let’s just say…it SEEMS good right now, but I’m holding my breath for a few more days. Unless I see a pattern over the course of 2+ weeks, I tend to chalk it up to those random weight fluctuations your body likes to play with.

I love your image of emerging from a chrysalis! Hopefully by/around springtime, I’ll do just that.

  13. January 24, 2011 8:55 pm

The taco meat and tofu mole look great!

      January 24, 2011 9:07 pm

Thanks Aparna! They were both quite tasty.

  14. January 24, 2011 9:28 pm

Would you like a couple of degrees from sunny Canberra? ‘Cause while I loves me some heat, it’s hard to sleep when your apartment is sweltering hot…

Love your mix of raw and cooked, and most of all I’m glad to see the desserts are still there 😉 The tempeh-stuffed omelette sounds all kinds of amazing! And I definitely am going ot make your blondie, ‘cept I just made raw nacho cheeze and having eaten half the batch in one day, methink I shoudl be going easy on the nuts for… erm, just today. 😛

Also, your sexy faces? Be still my beating heart.

    • Amber Shea @Almost Vegan permalink
      January 25, 2011 7:00 am

I would love to have as many degrees as you’ve got to spare!

I made raw nacho cheese yesterday too! 😀 But I used it to coat kale chips that are now just about done dehydrating.

::chortle:: You like our sexy faces? Well when you come visit, we’ll make lots more of ’em for ya. I KNOW that sounds dirty, but I don’t mean in the bedroom. Unless that’s what you wanted. Wait, no, that’s a joke! I’m kidding, come back! 😛

      • January 25, 2011 6:20 pm

        ;P

      Awesome! 🙂

  17. January 25, 2011 6:31 pm

We also sit on the floor and use the computer at the coffee table! Mainly because it allows the pooch to get some lap-time with us since she’s not allowed on the furniture 🙂

Your eats look awesome–so much diversity! If those wheat balls are anything like Veganomicon’s Bean-balls, they’re surely a winner (I LOVE those things!).

    Hope you’re having a great Tuesday 🙂

Ok, so we must not be that weird! Or, if we are, at least we’re all weird together 😛

Next time I make faux meatballs, I’ll have to remember to check out the beanball recipe in Veganomicon – thanks!

Oooh so good! Everyone’s green smoothies always look better than mine! If I come over, will you feed me?

I love those omelets – yours looks great! I’m going to go back and look at all the food again 😀

My green smoothies only look emerald green if I use pale fruits like pears, pineapple, banana, etc. But when I use berries (my favorite), they look like mud! So don’t worry if yours aren’t pretty 🙂

  21. January 28, 2011 8:42 am

Oh my goodness Amber, I am dying over all your fabulous meals!! Can I just come live with you and eat all the meals you eat? Hahah, I’m kidding of course. 🙂 Everything looks great, and way to go on the raw food! I’ve been working on incorporating a lot more raw food into my diet, too, especially where veggies are concerned. I feel so fresh and energized. 🙂
