April leftovers, part two

Hello there! I’m in the sky and on the road today for a grand total of 14 hours as I make my way to the Living Light Culinary Arts Institute in Northern California. As you may recall, I’ll be there for about three weeks as I take advantage of my Hot Raw Chef win and put my scholarship toward their Advanced Raw Food Nutrition Educator Series. Eee!

It’s especially timely and exciting, then, that chose this week to make me their featured raw chef! Eva and Venita, the lovely ladies behind Uncooking101, are sharing a different recipe of mine every day this week. Be sure to “like” Uncooking101 on Facebook so you don’t miss a thing.

Remember how I mentioned the royal wedding? These are the fat-free drop scones (a Bryanna Clark Grogan recipe) that I made at 2:45am. Despite not actually caring about the wedding, Matt really did wake up with me that day to watch it. And although he fell asleep on my lap during the ceremony, the fact that he got up early with me was super sweet!

This past Saturday afternoon, Matt dropped by Mud Pie Vegan Bakery & Coffeehouse and picked up a cinnamon roll to bring home for us! It was no Cinnaholic, truth be told, but it was a pretty tasty vegan sticky bun.

Matt and I then dined al fresco at Aladdin Café in the early evening, sharing some hummus to start.

I got this lentil soup with my meal, while Matt chose salad.

Aladdin Café has a lot of clearly marked vegan options on the menu, and Matt and I both chose sandwiches: a falafel-and-hummus wrap for him, and a cauliflower-and-falafel wrap for me. Each one came with a side of rice with curry sauce.

Since we were on 39th Street again, guess where we went for dessert? Right back to Mud Pie Vegan Bakery! We shared this awesome mini apple pie, served warm. Nomz!

After our late night out with friends on Saturday, we unintentionally woke up terribly early on Sunday, around 7:00am. I hate when that happens! But I made us a tofu scramble to make it all better. I had some roasted cauliflower alongside mine. An interesting, but delicious, breakfast!

Awhile back, Sarah over at The Ordinary Vegetarian and her fiancé Steve were in the running for a New York City couple’s getaway from Rose Pedals Vegan Weddings. Sarah held a giveaway to help boost her votes; she and Steve won the Rose Pedals contest, and I won her contest! My prize was a personalized vegan “care package” of items gathered during their NYC trip. Sarah picked out cinnamon-raisin peanut butter, cinnamon rugelach, Doctor Krackers, chocolate-covered coconut bits, curried cashews, and a double chocolate macadamia nut cookie (from Candle Café) for me! Talk about perfect! I got the package yesterday, and, um, the rugelach and cookie are already gone. Thanks again, Sarah!

The next time you hear from me, I’ll be at Living Light! YAY!

    Congrats on the cool package. The curried cashews especially look amazing.

    And congrats on being featured on Uncooking 101. I looked at the site but was disappointed to see that they used some nonvegan stock photos on some of their recipes. (not yours I hope!). I would think that everyone would learn from the vegnews issue. I did comment to them about this and I hope they can use real pictures of the recipes they post.

      Really? That seems odd, because those girls (Eva and Venita) are SO dedicated to the raw/vegan lifestyle. Either way, I can say for sure that my recipes don’t have stock photos, because I provided them 🙂

      Hey AMBER!

      Totally true what Bitt is saying. And my heart says totally true what you are saying too!

      There are 3 stock photos that are easily found by searching iStockPhoto in the search box:

      I’m sure I could dig up the pitifully photographed renditions of those recipes for a good laugh, but I’m honestly too busy running the 100% raw, 100% vegan B&B+ and sharing this lifestyle as well as I can, to as many people as I can, to find them. I actually will be making ONE of those recipes this weekend and hope we’ll get a nice shot of it in class. 🙂 The others will just have to wait until another day.

      Until then, the choice we made was disclosure and photos that look pretty darn close!

      You can see that 3 photos out of all the recipes is a small number and hardly the standard:


      Hey BITT!

      Funny thing is that it would have been at least another week until we were able to feature Amber but had a last-minute surprise when Venita found out that another chef had a picture on her site which was taken from a friend of mine without crediting her!

      NO WAY we were going to feature a chef who had STOLEN a photo. Of course different than to directly acknowledge the use of a stock photo. I’m not even going to name the (very popular!!) raw food site — as I’ve already gone directly to the person whose photo it was and don’t feel the need to drag anyone’s name in the mud.

      My time and energy are better spent with focusing on how I can do my own best ~ because for me ~ the end goal is to share this as well as I can. In a way that I feel good about at the end of the day. After healing from so many issues in such a short time, it’s the least I can do.

      Also, just FYI, not than I’m saying there was never a comment, but I don’t have any record anywhere of a comment from you, and there are no comments waiting in our queue. Well, except one that seems like the person shared an inappropriate amount of personal details, but that is another story.           Thank you Bitt. 🙂 We added that info as soon as the VegNews thing happened — the first day Quarry Girl posted it — I honestly hadn’t even seen it as a dilemma or thought about it before that. It all makes sense. I’m working on my photography skills, and thankfully I *did* get a good picture of the parfait last night! One down!

          Soon enough, they’ll all be off. But it takes time to remake all the recipes and take the gazillion pictures it seems to require to get that 1 fabulous photo.

    And thus starts what I will likely come to know as, “The Great Famine of 2011”, wherein all ingredients in our household turn against me, brandishing pitchforks to keep my grubby hands at bay, when, in truth and with near utmost certainty, I would simply stare ineptly at their labels should I ever get my hands on them. After a few wimpers and several good scratches of the head, I will surely resolve to figure out what cooking entails after I get back from the fast-casual restaurant I decide sounds appetizing. I miss her already…
