Here’s a fun “day in the life of a raw food nutrition student” post.

A shot of E3 Live woke me up.

A raw kamut-walnut scone with raspberry jam made a delicious breakfast.

Some Green Giant juice lent me midmorning energy.

I went cooked for lunch with black bean soup, then back to raw for dessert with a strawberry-cashew cream crumble.

These curry-vegetable wraps I had for dinner were some of the best savory raw food I have ever eaten.

And lastly, I enjoyed a chocolate-coconut “Dream Bar” brownie for dessert.

    Oh man, all of that looks insanely good. Best thing this week? Probably the spicy tacos I had after a long day of air travel. They were heaven at that moment!

      Oh! It’s a type of blue-green algae that comes from Klamath Lake in Oregon. Research on it is mixed, but a lot of people report huge surges in energy and well-being when they take it regularly. πŸ™‚

    my grilled hummus sandwich its my vegan grilled cheese so to speak. It was yummy had spinach and mushrooms in it πŸ™‚

    So far this week the yummiest thing I have eaten has been African Kale and Yam soup. It sure doesn’t compare to all your good eats! πŸ™‚

    For me, it’s been the Mung Bean Sprout Namul from Ani Phyo’s new book, Ani’s Raw Food Asia. It was so good, I’ve made it the last two days in a row.

    I’ve had a Whole Foods Salad… NOTHING compared to your meals. Wowza!! That coconut dream bar… the scone?! And those wraps! My GOODNESS. That’s it, I’m on my way over to you asap!

    Those veggie wraps look *droolworthy* πŸ˜‰ I had some hummus the other day from a local place (yes, just a container of it–nothing else) and I have no idea what exactly was in it (maybe certain spices), but it’s the best I’ve had in awhile!

    That scone looks amazing. Personally, I still can’t get the meal I had for Cinco de Mayo out of my mind, not just the best thing I ate this past week, but maybe all month. Vegan Enchiladas with homemade refried beans, and lots and lots of Guac!

    mmmm I love raw foods!! I did a 3 week course last summer, SO awesome! I ate like a queen and lost weight!

    Best thing I ate this week… sadly nothing comes to mind right now!!

    I made an African peanut-pineapple stew with kale this week and served it over quinoa! That’s probably the best I’ve eaten this week. The stew was: onions, garlic, kale, pineapple, peanut butter, crushed peanuts. It’s one of Bobby’s favorites.

    I love E3Live. Love the shooter glass!! You are just teasing us with all of your yummy foods. Actually the wraps look pretty good. The best food I have had this week was a raw lasagna and raw apple crumble. Neither made by me…got to go to a raw cafe. Yum.

    Probably my chocolate chip sunflower seed biscotti topped with peanut butter and more chocolate chops πŸ™‚ (OMG. Why didn’t I use my sunflower seed butter?! Then it would’ve been double-double synergy! Shame on me.)

    That doesn’t even come close to your delicious, though. Your mind must be spinning with new recipe ideas for your cookbook! πŸ™‚

    MMMMM, your meals looks so good! I like the photo of the raw scone! And I love that it seem like you balace raw and cooked food in a healthy way! I work on that too, since I love raw food, but want balance in my life and the opitunity to make both raw and cooked!
    My best eat this week was the chocolate tart I shared on my blog yesterday, I hope youll check them out! So so yummy!!

    Those wraps look just….well, I want them. Now. Teleport, please :).

    I’ve been picking up so much overtime, that my cooking has been pretty scarce lately. Tuesday I made a Chinese 5-spice stir-fry with rice noodles and shrimp. Neither vegan nor raw, but it hit the spot. Leftovers are my dinner tonight! I have yet to get my kitchen in order, sadly. I need to so I can play with my new dehydrator :).

    Loving the look of those raw desserts. I want to taste!

    I think the yummiest thing I had this week was a roasted beet, spinach, and goat cheese sandwich with a side of sweet potato fries. Scrumptious!

    those curry veggie wraps are calling my name. but it all looks so good.

    best thing i had this week was some fresh sunflower sprouts, i know i’m a geek. ok and my friend’s homemade raw chocolate was awesome too.

    Holy crap, that food looks SO good. I love the fact that the internet has a bank of food obsessives just like me! I’ve just returned to the UK from nearly 8 months in the US and I am mourning the lack of great, innnovative vegan food. The best I’ve had this week?……kale chips and avocado, tahini and indian mango chutney sandwiches. Nice.

    What an amazing time and great eats you’re having so far Amber! I’ve yet to go there, but maybe in the summer. I have a course waiting for me. Best thing I had this week, was my raw chocolate today – too much of it though!

    Best thing I’ve had this week was a salad I had two days in a row. I know that sounds boring; it just contained all of my favorite salad ingredients – beans, avocado, olives, etc. I love the portion sizes of your meals. One of my goals for summer is to clearly eat smaller portions, ha, and to eat smaller meals (including juice and smoothies as meals) throughout the day.

      Portion control is TOUGH! The good thing about fresh raw fruits and veggies is that the portions can be big. Gotta watch the nuts and seeds, though!

    These food photos are KILLING me! I can’t even remember what the best thing I ate this week was, because my mind is busy taking in all of your photos!

    How does the food compare price-wise with 105?

    A question about your E3 Live, (just because I am still in the learning process) which do you use? I have looked up E3 from the raw food world and wondered if you might let me know which you prefer.

    Thanks so much. I have yet to make it into KCK for a some great food. I’m still leaning towards Eden Alley, but I just hate the drive from Leavenworth.

      Hi Lynn-Ann! I’ve only tried the original E3 Live, but I’d like to try the Brain-On at some point. I think you’ll be good with any of them!

      I’m afraid I must say KCK’s a bit of a wasteland for veg food πŸ˜› But KCMO’s got LOTS to offer! I looove Eden Alley. πŸ™‚
