Raw desserts party at the Inn!

As I mentioned on Facebook last week, my classmates and I got together in the Living Light Inn kitchen for a little raw desserts party! As per their request, I showed them how to make my Hot Raw Chef-winning caramel-fudge brownies (the very reason I’m here at LL to begin with!), plus a bigger-batch version of my 5-minute blondie with chocolate ganache frosting, and some simple raw chocolate bars. Yes, all in one night!

The role of “instructor” is still pretty new to me, but I think I did ok! It was all very laid-back and comfortable, with lots of jokes and laughs.

The brownies needed time to chill, but we dug right into the blondies.

Sorry for the poor lighting in the kitchen, but I think you can still tell that they turned out SENSATIONAL.

We brought the brownies to class the next day to share.

If you haven’t tried my winning recipe, why not?! Remember, you can replace the lucuma powder with 2-3 Tbsp coconut/palm sugar (or even regular brown sugar!), like we did for this batch.

You wouldn’t believe how quickly these disappeared! Or…maybe you would. πŸ˜‰

I had such a fun time at our little party/get-together/mini-class, and I’m so thankful to have met all these wonderful people at Living Light! We’ve really had a great, great group.

    Looks like you had a wonderful time and a great group of new friends. When I lived near other rawies, sure we got together to make treats–loved it! Not so much now, though.

    Are you still there, or moving on?

      Tomorrow is my last day! 😦 I still have several more posts to do about my time here, though.

    WOW, Amber, those dessert look FAB! You are one Hot Raw Chef in the kitchen, I’d say! πŸ™‚ Wish I was there to see you do your “thang.” My hubby and I like to create sweet treats together just for the fun of it. We’ve come up with some hum-dingers, too! Looks like you are having a blast, not to mention, being in your element. You, go, Girl! πŸ™‚

    When I came to the picture of the blondies, I actually had a chill go up my spine from how much I wanted one! Your brownies look fantastic, as soon as I get my hands on the right ingredients I’m makin’ a batch.

    Looks like such a fun get-together. Make raw desserts all night? Count me in! I seriously need to get to work on making your brownies, though. Thank you for the lucuma swap tip!

    I’m sure you did great as an instructor, and let’s face it….how hard is it to teach when you know the final exam is eating something delicious?

    You are right, why HAVEN’T I made them yet. I need to. I love that drizzle on top. Looks like a fun time with delicious refreshments. πŸ™‚

    You’ll find out if you read my blog tomorrow but letting you know early you won the arnica. I really hope it helps your knee! If not, it’s good to have around for sore muscles and general accidents and stuff.

    Mmmmm! Not the best post to be reading first thing in the morning, when I still haven’t had any breakfast hehe. So stoked for you that you won Amber, can’t think of a more deserving person especially that you so generously give up your time to share the experience with us! PS hope you mentioned a kitchen upgrade or at the very least a change of table cloth at LL’s suggestion box hehe

    Oh yes! My friend Ally and I would get together with her husband and my bf and we would have tons of cook-togethers. Our last one was a microbrew and appetizer party where we ate small appetizers such as homemade guac and salsa fresca and chocolate fruit dip (all vegan) and taste-tested about 12 different microbrews. We would all taste the beer, then whoever really liked it, got to claim it.

    Ally and I would always do food-related stuff, like go mushroom-hunting, or elderberry-picking, or homemade-wine drinking. All that stuff that makes me sound like I’m a bumpkin. Lol.

    As for your raw desserts… they look awesome! I have yet to try a single raw dessert. I know, right? Three raw cookbooks and a dehydrator and yet I don’t have the courage to make up a pan of these!

      DON’T be afraid of raw desserts! They’re so easy! You should let my brownies or blondies take your raw dessert virginity πŸ˜‰

    I am really interested in the brownies, but I don’t have any cocoa butter? What can I substitute instead?

      Hi Samantha! You can just omit the 2 Tbsp cocoa butter and add an additional 2 Tbsp coconut oil. πŸ™‚ Please let me know how they turn out!

        Thanks so much! I can’t wait to try them! Before raw, brownies were one thing I totally overdid on, along with other carbs, but the raw brownies are just as good and so much more satisfying!!
