Early fall leftovers

As promised, I’m back with more “leftovers”, these from the early fall.

We’ll start out with the “ugly duckling” food first, and get that out of the way! These are Ethiopian yellow split peas; I prepared them as I do misir watt, simply parboiling the split peas first.

Though I know you can’t tell from the hideous photo (sorry!), this is some apple cinnamon hot cereal from Bob’s Red Mill with a dollop of honey added.

A nighttime snack for me and Matt one weeknight: roasted potatoes with garlic-cumin aioli.

Getting a little prettier! This Chocolate Crumb Cake is out of Kris Holecheck’s Have Your Cake and Vegan Too.

Matt often takes cell-phone pictures of his food when he’s on business trips and proudly sends them to me for approval, hehe. Here’s a hummus platter and soy latte he got in an airport…

…and here’s a vegan carrot-ginger muffin from the same trip.

Homemade hummus! Always good.

I made a batch of raw Classic Vanilla Bean Ice Cream (cookbook recipe!) and served myself a generous portion one night over a lightly sautΓ©ed apple with cinnamon.

I still had one scoop left, so the next morning, I made myself a treatβ€”a “rawffogato”! I topped my usual coffee (with almond milk) with a small scoop of the ice cream and enjoyed the hot-and-cold combo.

I met blog reader Jess (of Midwest Vegan) at Whole Foods for coffee and kombucha one afternoon. She only lives a little bit north of KC, so it’s about time we met!

Lastly, after a full day at the Texas State Veggie Fair a couple weeks ago, Matt and I dined at Cosmic CafΓ©, which I’ve written about before. We shared hummus to start (of course).

Matt ate the veggie quesadilla with rice and black beans.

I had a cup of their dal (lentil soup)…

…followed by the Cosmic Stir: asparagus, broccoli, bell peppers, cauliflower, onions, carrots, squash, snow peas, cabbage, ginger, and tofu in a mild soy glaze, served with basmati rice.

Yes, we still had room for dessert! We got my favorite: the Sweet Awareness, hold the whipped cream. Peanut butter, banana, strawberries, tahini, and honey stuffed in naan bread.

Wow, I think I’m actually caught up on leftovers now! Coming up soon, I’ll share with you a couple of fun recent events, a review or two, and a truly droolworthy RAW strawberry-banana cream cake. Stay tuned!

    Ooh, I love the looks of that cosmic stir! So colorful. The dessert also sounds fabulous! Strawberries, banana, tahini, and honey, wow.

        I thought the same thing. I love drinking out of a real mug when out and about – it feels like a more ‘real’ drink when it’s not out of a paper cup. If that makes any sense.

          Hehe, I know what you mean. I like when coffee shops ask if it’s for here or to go, and serve it in a real mug if it’s “for here.” πŸ™‚

    I feel proud to be sandwiched between such culinary deliciousness! Lol. Your hummus looks amazing! Actually, all the food looks amazing. I think it’s snack time. πŸ™‚

    I’ll be back in OP again in December. I think it’s time to check out Mud Pie Bakery!

    I love how, with your home-made hummus, you make the effort to create little dips for a nice oil to hide in! Yep, definitely a cookbook author πŸ™‚ xo

    That strawberry naan thing at the end looks delish!! I have never tried Naan but my friend raves about it!!!! I will have to try it like that!!

    Mmmmmmm, the cosmic stir! Mmmmmmm, warm cinnamon apples with ice cream! Mmmmmmmm, HUMMUS!!! How is it that I just ate breakfast and I’m starving all over again? The only thing that sounds odd to me is strawberries with tahini…

      Actually, the Sweet Awareness doesn’t usually come with strawbs, but since we asked them to hold the whipped cream, they threw in the extra fruit for free. πŸ˜€ It actually went really well together!

    I went to the Cosmic Cafe a couple of times ages ago, so I don’t know why we haven’t went lately…My husband sends me text pics of the meals he puts together for the kids when I’m away, which is sweet…You guys make some serious nighttime snacks! Yum!…The apples and ice cream looks like something my family would devour.
