The pre-wedding countdown

September 4, 2012

Five days.

In five short days, I’ll be married!
And I have been so busy. SO SO BUSY. I will likely be behind on emails and such for weeks to come, just to warn you all.

As you may know, I’ve been guest-posting off and on about my wedding planning experience on the Rose Pedals Vegan Weddings blog, and in fact, my final pre-wedding post there just went live this morning: Marching To the Beat of Your Own Drum. I talk about some of the things that set our wedding apart from “the norm,” and you can get a peek at our awesome invites, too. Give it a read!

There are still a million and one things to do before the big day on Saturday, and these juice cleanses have been absolute lifesavers for me (time-wise) these last few weeks. I HAVE been eating “real food” too, thoughβ€”here are a few things I’ve been noshing on.

Smoothies, like this chocolate avocado shake:

A whole bunch of…

…raw vegan Caesar salads! Often with extra avocado and/or olive tapenade.

I’m a little obsessed. I’ve been using the Peppery Avocado Dressing from this book

…plus my own “Parmesan” sprinkle.

Avocado again, this time in the form of a sugar-free chocolate pudding (the recipe will be in my second book!):

I try and make sure my husband-to-be gets fed, too. πŸ˜› On our last Sunday as an unmarried couple, Matt enjoyed his usual Apple Pie Smoothie (page 43 of Practically Raw) for breakfast.

This nighttime snack for Matt consisted of frozen bananas + leftover Chocolate-Coconut Fudge Sauce + a few chocolate chips.

That’s all I’ve got for now…too much else to do! And on top of all the wedding stuff, my bestest bloggie friend arrives on Wednesday night, all the way from Australia, to stay with us for two solid weeks. I can’t wait!

My final juice cleanse review is scheduled to go up on Thursday, but other than that, the next time you hear from me, I’ll be a married woman! WOOHOO!

I’ll likely still be sharing statuses and photos on Facebook, Twitter, and Instagram (username chefambershea) during this time, though, so watch out for updates from me on those pages.

And after it’s all said and done, if you all don’t mind, I may sicken you with a whole series of posts about our quirky, unconventional, elegantly gothy, eco-friendly, gluten-free vegan wedding. πŸ˜‰

    Hi Amber!

    Congratulations on your upcoming nuptials!

    When you get a chance, you should stop by the Emerald Forest Health Store and talk to Julie. She’s usually there all afternoon on Mondays, Fridays and weekend afternoons. I think she’d really enjoy your raspberry recipes! Tell her Chuck sent you. (She might be interested in carrying your cookbooks in the store.) Here is their website I built a little over a year ago:

    Congrats on your upcoming marriage! I read your other post and found it funny that serving all vegan could be offensive to some. Is it that hard to go one night without meat?!
    Enjoy every minute and know it is ALL about you and Matt, glad you are doing what makes you both happy above all else πŸ™‚

        Wednesday is the only full day left in between me and you πŸ™‚
        Then don’t wear a black dress! Really, I don’t think anyone is actually following our black and white idea. So wear anything.

    That’s so exciting. Congrats! Enjoyed your guest post. It’s your day so celebrate it however ever you like.

    Your food looks delicious, as always. Sometimes I find myself a little addicted to that dressing you linked to, as well. So good!

    I’ve really liked your juice cleanse posts. They’ve made me interested in doing one.

      The juice cleanses have been easier and more enjoyable than I expected. At some point, hopefully soon after the wedding, I do plan to do a post about my personal experiences with juice cleansing (rather than just the objective details about each cleanse).

    Hi There Lovely,

    I’m so excited for you, my dear. The big day is right around the corner!!! And I love that you are making your wedding unique to YOU and a reflection of who you (and Matt) are. That’s so important. We did a lot of things that were considered nontraditional, but we paid for our entire wedding and we were doing what we wanted (and we did). I can’t imagine it any other way. Your wedding day will be magical in so many ways. Don’t let anything get you down. All that matters is that Matt is right there by your side…and at the end of the day and years from now, all you will remember is how handsome your honey looked, how wonderful it was to hold his hand while you spoke from the heart, and the happy, smiling faces of your friends and family.

    A quick story…
    Scott and I were married outside in the mountains.
    At our wedding the cake wasn’t ordered. I remember at the reception the lady in charge of the venue came up to me crying and shaking when she told me. I looked at her, smiled, gave her a hug and said I could care less! And I meant it. I was 25 years old, I just married my best friend and love of my life, everyone I loved was in one place, the weather was perfect, the music was rockin’, I was drinking my favorite beer, the food was amazing…so what about the cake. She ended up ordering a bunch of little desserts and mini cakes from a near by bakery. It all worked out great (plus, in the end, we didn’t pay for the cake or desserts). I wasn’t upset about this mistake because I didn’t invest my energy into everything being perfect (and really, at that time, I cared less about the cake). Scott was there and that’s all that mattered.

    I hope for you the same wonderful memories, no matter what happens. We can’t control everything, but we can control how we react to what life throws at us.

    I will be thinking about you on Saturday. Take some time for yourselves. Allow yourself some post-wedding downtime. I look forward to pictures when you resume your routine!

    BTW, I got your book last week, and picked out a recipe for my first meal, post-juice cleanse, so I had the walnut-spinach pesto over zucchini noodles. SO stinkin’ good!! That totally hit the spot (I ate 2 servings, ha ha!). I can’t wait to try more.

    Having just come out the other side – enjoy these last few crazy, busy days πŸ™‚ I am sure you’ve had many people tell you already to pause during the day to soak it in, because it goes so fast, and I will add to that. I really enjoyed those pauses actually. The aftermath of the wedding still seems pretty great to me too and I am glad (so glad!) we did it on our terms. More traditional than you I think, but smaller and minus any sit down reception πŸ˜›

    Anyway, congratulations in advance and I’m looking forward to hearing what you and Hannah get up to too πŸ™‚

I got married 2 years ago (time flies!) and I remember how upset some family members were about our adult-only invites so I hear you. I love your ‘engagement pics.’ You look absolutely radiant.     Amber, I’m so excited for you! By this point your wedding is just 2 days away. Omg! Im hopping over to read your guest post after this. I look forward to seeing all the beautiful pics of your big day and wish you and Matt all the best with it. Remember to breathe, lol. All my friends who’ve gotten married say that day was just a blur. So I figure if you take extra time to breathe that might help slow things down, lol.

    Congratulations! I just read your post on Rose Pedals… I got married last year and guess what? We emailed our invitations (though now I do wish we had done paper ones), I walked myself down the aisle, we didn’t have a bridal party, our ceremony was not religious, and the top half of the cake was vegan and gluten free! I am my husband’s second wife and he kept saying how he didn’t have any input for his first marriage so nothing was really how he wanted it (church, funny tux, toasts, speeches, big froufy stuff). We had a s’mores bonfire the night before for people to get acquainted and the welcome gift bag was a Whole Foods lunch bag with a bottle of wine, the s’mores kit I put together, roasting stick, local chocolates, awesome chips and some other goodies.
    Our day was a complete 180 degrees and we had the most amazing day – bright sunshine, mist rising off the beach, and a handful of our closest friends and family (with no kids being allowed at the reception). We had drinks and unbelievable appies where we were married and then had an option for guests to join us for dinner at our favorite restaurant should they wish, which they all did.
    What I’m trying to say is that it is absolutely your day! You have to be happy with it and when you look back on it be comfortable with your decisions which is sounds like you will be. We loved our wedding, we hope our guests loved our wedding, but when we think about the day we wish we could do it all over again because it was so great.

    Ha. I drink a quart of smoothie almost every morning, too. Until someone commented on it, I assumed everyone thought 32 oz of smoothie was an average serving size πŸ˜‰
