105degrees, L1/W2/D3: tacos & pizza!
This. Day. Rocked! You could call it “Junk” Food Day, Crowdpleaser Day, or Convert a Carnivore Day. We made some of my favorite raw food dishes – nay, some of my favorite DISHES! – and reaped the rewards of the last couple days of prep work.
Before I begin, though, I must mention the killer contest that Hail Merry announced today. You may have read my review of their incredible line of raw vegan snacks, and I just mentioned on Monday that I visited a Whole Foods all the way down in Dallas over the weekend JUST to procure another bag of HM’s blonde macaroons. Now, on to today’s raw meals…
Though I didn’t show it, we’d also prepped some tortillas yesterday. By this morning, they were dry enough to handle, but still pliable.
Another thing I didn’t show yesterday was the (sunflower-seed-based) “refried beans” we’d prepared. Those dehydrated overnight too, and this morning, we blended a tomatoey sauce to add to them.
I’ve made these at home before, and I can’t get enough of them.
We each made our guacamole however we wanted it. I like mine salty and cilantro-y.
Finally, we threw together a teensy batch of mango-tomato salsa.
Russell showed us how best to layer our taco ingredients…
…and we followed suit, adding a drizzle of cashew sour cream last.
RAW TACO TIME!
I garnished the plate with small scoops of extra guac and salsa.
Spicy, saucy “beans;” cool, creamy guacamole; fresh, fruity salsa; and rich, tart sour cream…MMM. The chewy tortillas were great, too.
Here’s me and my lover, I mean taco.
Oh MAN. This is hearty, filling, flavorful raw food at its best.
As if that weren’t enough awesomeness for one day, our pizza crusts from Monday were done drying.
We’d also dehydrated some “caramelized” onions overnight…
…AND we’d sous-vided some red pepper and tomato for about 12 hours.
The latter went into a simple pizza sauce. Along with small batches of pesto and macadamia nut cheeze, the caramelized onions, and some kalamata olives, our pizza prep stations were ready.
First came layers of sauce and onions…
…followed by pesto, macnut cheeze, and olives.
I added some crushed red pepper and freshly ground black pepper, and finished the crust by brushing it with olive oil and adding just a sprinkle each of nutritional yeast and salt.
A little rustic, a little refined, and ALL scrumptious!
What more can I say? Tacos + pizza = quite possibly the perfect raw day.
Gosh you guys are getting through sooo much stuff early on!!! RAW TACOS, now that’s something I haven’t made yet! Keep ’em coming girl 🙂

Holy delicious-ness! This day DOES look like raw vegan perfection 🙂 I absolutely love fresh guacamole . Yours looks fantastic! And I’m curious about the macadamia “cheeze,” I’ve never heard of it before. I continue to be amazed by everything a food dehydrator can produce.
The macnut cheeze is actually so simple, you don’t really need a recipe. Just soak raw macadamias in water for an hour or two, drain them, then blend them with a pinch of salt, a dash of lemon juice, and JUST enough water to get the mixture smooth-ish. No dehydrator needed! 🙂
Well, these are two of MY favorite foods. That would make a great day for me. Your presentations are lovely and the food/ingredients are so colorful.
I think these meals would please just about anyone, raw and non-raw alike.

That taco = obsession. There’s not even proper Mexican in Canberra, let alone vegan-friendly, let alone raw! That looks so insanely fresh and amazing… and now I’m going to go open my jar of Barney Butter – the last of the American nut butters. I just need something to make myself feel better… 🙂
Mexican food ranks among my favorite cuisines, so I’m so sorry to hear you can’t get good Mex there! At least you have that jar of nut butter (of a brand I’ve never tried!)…I mean, it’ll at least last you through the weekend, right? Maybe… 😉
That’s just another thing we’ll have to do when you visit: make healthy, virtuous raw tacos together, AND go out for spicy, greasy, authentic Mexican food! They even each other out, you see.

You should! It’s very easy (cashews, water, lemon juice, pinch of salt) and quick to whip up.

Aaahh, so glad to hear you’ll make my blondies at some point! Finding vegan white chocolate = pain in the you-know-what =/ But you’re right, you could certainly make your own! Cacao butter, cashews, agave, vanilla, pinch of salt 😉
*Gasp* How easily I’ve been replaced by a taco! That taco may taste moist and delicious in your mouth but it won’t hug and kiss you like I can. Just remember that when you have your grubby little hands all over that salsa-laden, bean-crammed, cream-filled taco. (When I put it that way, it does make me salivate a little.)
On a serious note, I love how the lime wedges hold that thing together. Neat idea.
(BTW, I’m specifically avoiding commenting on the pizza because of the olives… bleck.)

Thanks for noticing my lime wedge holder-uppers! And be quiet about the olives. You just don’t realize yet that you like them. Remember how you thought you hated tomatoes and olive oil? You’re making progress on the olives, I know it. Believe!

On the pizza…I would have had to leave off those black olives…yuck…lol Was everything as good as it looks?

Oh, I most definitely have suggestions! My #1 pick would be Matthew Kenney’s Everyday Raw. The ingredient lists are short and the instructions simple. Many recipes do require dehydration, though (but if you wait a few months, Matthew’s next book, Raw Express, is going to be 100% dehydrator-free!). I’d also recommend Ani Phyo’s first book Ani’s Raw Food Kitchen – there are very few recipes in there that need any fancy equipment whatsoever. If you do pick one of those up, let me know what you think!

Avocados are one of nature’s perfect foods, don’t you think? 🙂 Raw tacos are fantastic – you must try one sometime if you get the chance!
